To ensure the service runs smoothly, a single, standard menu must be chosen for the whole group, with the option of a vegetarian or pork-free alternative.
Choice of starters
Classics & Local Specialities: Quiche Lorraine, Homemade pâté en croûte, Lorraine pâté with green salad, Vosges salad, Game terrine, Vol-au-vent, Beetroot carpaccio with goat’s cheese and orange zest.
Seafood & Delicacies: Small blinis with smoked salmon, smoked trout fillet.
Hot dishes: Munster cheese puff pastry, onion tart, Lorraine sausage in brioche, leek tart.
In Season: Asparagus with mayonnaise, Cream of asparagus soup with smoked ham, Tomatoes and mozzarella, Cured ham on a bed of melon,
Choice of main courses
Regional specialities: Choucroute garnie, Lorraine stew, Baeckeoffe with green salad.
Meat & Poultry: Chicken in Riesling, duck breast with mirabelle plums, shoulder of pork ‘à la diable’, sirloin with Munster cheese sauce, ham en croûte, pork cheeks with apples, mixed grilled meats, Obernois cervelas.
Game: Game stew with spaetzle, braised wild boar with mirabelle plum chutney.
Fish & Seasonal Dishes: Cod ‘à la bonne femme’, Salmon puff pastry, Dartois with prawns, Asparagus with two types of ham (in season).
Choice of desserts
Traditions & Sweet Treats: Homemade tarts, Mirabelle plum clafoutis, Kougelhopf with caramel sauce and vanilla ice cream, Rum baba, Île flottante.
